Peru - Primitiva Apaza

The Story

High in southern Peru, the Alto Inambari subregion of Puno’s Sandia Valley produces some of the most distinctive coffees we work with. This is a region of extremes, where tropical jungle meets icy Andean peaks and mineral-rich soils push coffee growing to its limits. Elevation defines everything here.

Reaching Sandia requires a five-hour journey from Juliaca into the jungle valleys. At elevations above 1,600 meters, conditions are ideal for slow, even coffee maturation. Alto Inambari, named for the highest reaches of the Inambari River, climbs even higher, with farms approaching 3,000 meters above sea level.

Primitiva Apaza Quea has been growing coffee on her farm, Paltaypampa, for more than a decade. Named for the indigenous Quechua phrase meaning “the mountain where avocados grow,” the farm spans two hectares planted with Caturra and Typica. Harvest takes place between August and September.

Cherries are hand-picked, fermented for 16 to 20 hours, then washed and dried slowly on raised beds under parabolic dryers. Drying is guided by experience and sensory evaluation, resulting in a coffee that reflects both place and process.

Primitiva has worked with Red Fox Coffee Merchants since the beginning of their work in Puno over a decade ago, helping bring long-term stability and recognition to a remote region with exceptional quality.
